燻製主体のお店なので、お食事というよりは
お酒を飲みながらのアテという印象。
燻製料理は、これまでの経験だとガッツリ強い薫香のリターンがある印象でしたが、
こちらのお店は、
料理によって薫香の広がり、リターンなど
強弱の付け方の工夫が凄いなぁと。
◉最後の燻製卵のプリンと貴醸酒の組み合わせは、
口に運ぶたびに薫香、卵の味わいに変化があってとても面白い。
◉店主さんの、オススメのお酒は
島根、鳥取の山陰地方の日本酒(特に熱燗で)
店主さん言わく、蔵元の杜氏さんが良い意味でイカれてると(褒め言葉)
個性的なお酒が半端ない、面白すぎる。
熱燗にする事によって、
冷酒では感じにくいお酒の強く広がる香りが
燻製料理にとても相性良く寄り添う。
⭐︎春巻きに添えてある柑橘
【仏手柑】
高知県の柑橘で、レモンとオレンジの香りがして
尚且つみかんの甘みがあり、初めての経験で
とても美味しかった。熱燗に少し絞っても美味。
◉この度、6600円のコースをいただきましたが、
店主さん言わく、
3600円のコースの方が実はオススメなんです。との事で、次回がまた愉しみになりました。
一見、店主さんは少しとっつき難く話しづらいと思いきや。
喋っていくうちに面白いエピソードが沢山出てきて、カウンターを挟んでとても心地良く楽しく過ごせました。
日本酒とおしゃべりが好きな人には、カウンターが是非オススメ。
山陰のお酒の良さを教えてもらいながら話を進めると店主さんの気分が乗ってくると思います。
