中華そば 篤々(トクトク)
久し振りに名店訪問❕勝田台(八千代市)まで来ました。
東日本100名店に2020年から3年連続選出された名店です。
夫婦二人で営む10席だけの小さなお店です。
記帳して外で待ちます。
煮干しそば(濃口醤油のかえし)と生姜煮干しそば(白醤油のかえし)
がメインで“あえ玉”や“二ボだしごはん”(数限定)などあります。
裏メニューも有るようですが、初訪問はやはりド定番でポチっと。
煮干しそば煮玉子入り
二ボだしごはんをポチっと、
連れは生姜煮干しそばを注文です。
最初に“二ボだしごはん”が配膳されますが、あられとわさびの小皿が付きます。
これはラーメンのスープをかけてお茶漬けにして頂くと美味しと推しています
煮干しそばのスープは臭みのない煮干しの程好い香りの優しいスープほ。
菅野製麺のストレート細麺は低加水でパツン系です。
歯ごたえのど越しよく美味しい。
チャーシューは低温調理のレアチャーシューが2枚、海苔1枚、麩、刻み玉葱がトッピング。
煮玉子はトロッと半熟でした。
“二ボだしごはん”をつまみながら煮干しそばを食べ進み終わる頃、煮干しそばのスープを二ボだしごはんにかけて添えてあるあられとわさびを投入!お茶漬けにして頂きます。
これが美味しい✨

今日はこれが一番良かったかも…、なんて思ったり。
10年の和食職人を経て独学でラーメン屋を開業した店主の技と気持ちが詰まった渾身の一杯でした。
