今日は、新年度職場の昇進祝いで、銀座マリオット内にあるシャレオツなお鮨屋さん。魯久さんに連れとお邪魔しました。
大将の本間さんは、22年間海外を含めて有名鮨屋で修行を積み、昨年、魯久の大将に。
大将1人で半径の14人席を回してます。
カウンターの造りも斬新で、昼のランチ8000円は3回転3時まで。4時からディナータイムで、夜最終20時予約16,500円までぶっ通し、大将アスリート並みの体力と、集中力がひかる無駄のない動き、見ていて気持ちが良いです。
豊洲でネタが2倍3倍当たり前のご時世に、この値段で回転できるのは、大将と仲卸の人間関係の信頼性だけの話で、その鮮度と熟成度は、神の領域です。インバウンドで来た外人さん達は目を丸くしてデリシャス連発です。
本当に凄い‼️本間大将ご馳走様でした。
