広尾駅からほど近い場所にある会員制の馬肉料理レストラン。
大きな扉を開けると、ドーンとひらけたオープンキッチンに、16〜17脚ほどイスが並んだドーンと大きなテーブルが1つ。(全席詰められるのではなく、私が伺った時は5組11名でしたが)向かい合わせで座ります。
お料理は全14品のコース仕立てで、馬刺し専門店とは一味も一味も違う、あらゆる角度から馬肉が楽しめるお店です。
鮮度や素材の良さはもちろん、希少部位や調理法にもこだわっていて、馬肉のポテンシャルは最高値に。お店の方の丁寧な説明がさらにワクワク感を高めます。おまけにお野菜まで驚くほどの美味しさ。

・蕪のスープ コンブオイル
・熟成馬肉の握り 6年熟成のバルサミコ酢で作った酢飯で
・松茸と馬の治部煮 馬肉は半生で
・馬の帯(お腹のお肉)の刺身 融点23度の馬肉は開いてとろりとさせてから、ネギ、生姜、ニンニクの体を温める薬味とともに
・馬肉の刺身盛り合わせ シャトーブリアン、フタエゴ、カイノミ、ちょうちんの4種
・お腹の霜降り肉の粕漬の炙り(繊維質があってお魚のような風味) 奈良の固有種やまとたちばな(超高級な柑橘)とともに
・ハツ(オリーブオイルと塩)とレバー(失念!お出汁と塩だったかな?)のお刺身
・馬肉のユッケ 卵黄のエスプーマと昆布締めで揚げた白魚とともに
・帆立のシャトーブリアン巻き。おかき揚げ
・タテガミの軍艦巻きと、お腹のお肉のタタキとべったらでトロタク風。極上の佐賀海苔で
・エリンギと馬肉の頰肉=ビンタのロースト 生胡椒、出汁、生わさびで
・ハラミのロースト 縦切りレンコン縦切りと
・エスニックサムゲタン 鶏のお出汁とアジカをベースにした馬肉そぼろでいただくお茶漬け
・デザートは、ピスタチオのかき氷、金木犀のソースとホワイトチョコにドライみかん
最初から最後まで驚きと感動で堪能しました。
