一度は伺いたいと思い続けていたお店です
熟成と魚の旨みというものに衝撃を受けるとの話を聞いてからの初訪問
実際に…衝撃!
つまみの段階からがっつりと旨みが押し寄せます
そして、旨み濃くネットリとしたネタとそれをしっかり受けるシャリの酸や硬さのバランスが素晴らしいです
最初にシャリのみ海苔に包んで食べますが、これを食べるからこそ気づける「鮨」としてのバランス
