「香住のセコガニ」
雌のセコガニは内子、外子、身と綺麗に盛り付けられています、蟹酢の塩梅で蟹の甘み旨みを引き立てています
「松葉蟹の椀」
鰹香るお出汁美味しく、松葉蟹の甘み、大根の甘みを引き出しています、この大根が素晴らしく美味しいです、同じ松葉蟹の身と味噌をあわせた一品も美味
「根芋の出汁餡掛け」
食感は特徴的なれど味を主張しない根芋はシンプルに出汁を味わう一皿として供されます、この香りと味わいを楽しめて良かったと感じられます
「新潟真鴨」
新潟の網猟の青首、丁寧に火入れされ脂の香りよく味も抜群です、鴨の油で焼かれたネギも絶品です
「蛤の蕪蒸し」
蕪蒸しの中には蛤、銀杏、百合根入り、出汁の餡掛けとの一体感も素晴らしいです
「海老芋の唐揚げ」も美味しかったなー
