下関産直送の天然ふぐフルコースがいただけるお店。
代々木駅から近く、落ち着いた雰囲気です。
98%が養殖と言われる中で、天然ふぐをコースで味わえるのは貴重。
今回いただいたのは 夜の部 ふぐコース「葵」。
季節のお通しは
鴨ロース、丹波篠山の栗、むかご。
一品一品が丁寧で、最初から期待が高まります。
ふぐのにこごりは、天然ふぐの皮のみで作られており、
むっちりとした食感と濃い旨みが印象的。
ふぐ刺しは一切れ一切れが大きく、見た目の迫力も十分。
5日間熟成された天然ふぐを、まずは塩で。
塩だけで成立するほど、旨みがしっかりしています。
北海道産のあん肝はとろける味わい。
皮は3種類(みかわ・だじゃれ・そとかわ)で、
ふぐの皮の美味しさを改めて感じられました。
巌流島のネギとポン酢で食べるのもおすすめです。
白子はふわふわでとろける食感。
溶岩焼きは厚切りのふぐを溶岩プレートで焼き上げ、
しっとりと旨みが凝縮されていました。
唐揚げは身が大きく、ジューシーで食べ応えあり。
締めは生米から炊き上げる雑炊で、
出汁の旨みが体に染み渡ります。
デザートはだし巻き卵にバニラアイスという意外な組み合わせで、
優しい甘さが印象に残りました。
ひれ酒も香りが良く、料理との相性が抜群。
今回は4人で伺いましたが、量・内容ともに満足度の高いコースでした。
