どのお鮨も美味しかったのですが、『光りもの』鰯、秋刀魚、鯖、小肌が特に美味しかったです♡
メニューにも、其々のお鮨のシャリとネタの温度が書かれていて、この日の鮪の赤身はシャリが36℃、ネタが21℃。
トロはシャリが38℃、ネタが25℃。といった様に、同じ鮪でも部位によって変わってくる。
その為、口に入れた時のシャリの解け方も変わってくるので、その変化も楽しめました。
穴子はシャリ38℃、ネタ36℃と高めで、穴子の絶妙なふわふわした食感を楽しめました。
唯一無二のとても美味しいお鮨でした。
