念願叶い鮓村瀬にうかがいました!西麻布の喧騒から少し離れた通りにある落ち着いたシックで美しい佇まい…18時暖簾がかけられ入店…村瀬大将の威勢のいいご挨拶のお迎えがなんとも嬉しい…白木が美しいコ型のカウンターは今夜も満席…窓から洒落た坪庭が眺めます。この店が気になっていたのは数年前、何かの雑誌で取り上げられていて…まさに大将の職人堅気オーラの凄さ、そして寿司哲学に惹かれ、さらに熟成のスキルを極めた江戸前寿司の達人技を是非体験したいと思っていたからです!目の前の一等席から見た実際の村瀬大将はとにかく大きく圧巻…やはり凛とし圧倒的ですが、実は優しく楽しい…さりげない目配り、気配りも素晴らしい!しかし一旦包丁を握るとやはり一流の職人…いずれもお見事で立派なネタを繊細な技で捌いていかれます!出される酒肴に鮨はとにかく美しい…
梅肉の茶碗蒸しから始まるコースは、いずれも濃厚な美味に溢れ、熟成の技が光る逸品揃い!立派なクルマ海老(マキエビ)を撮り忘れ残念ですが、まさに計算された圧巻のラインナップです♪特に握りは各ネタの旨味を最大化するシャリがお見事…粒立ち、口の中でほどける食感や程よい温感、そしてネタとの絶妙な調和を生み出す赤酢と米酢の使い分けによる酢具合…とにかく一貫一貫のバランスが素晴らしい!キスの昆布締め、そして見るから美しすぎるコハダときて…豪華雲丹巻き!雲丹と海葡萄の食感、雲丹の濃厚な旨味の引き出しがお見事な逸品です!熟成技の極み、アラとヒラメ、そしてさっぱりポン酢のワカメとアイススプラウトを挟み供される毛蟹&キャビア、そして分厚い蒸し鮑に雲丹&イクラがたっぷりまぶされた…旨味と歯応えのシンクロが見事な逸品が続き圧倒されます!このあと北海道産大ズワイ蟹をいただく辺りは酒との相性が抜群…幸せが込み上げます!閖上の赤貝も季節ものの秋刀魚も素晴らしい!さらになんとも身厚で柔らかく旨味溢れる宍道湖産天然ウナギの贅沢なこと…
大トロの炙り葱鮪に始まり、赤身のヅケから中トロ、大トロと続くまさにここの真骨頂、塩釜産マグロの三段構えはやはり伝統的江戸前こその醍醐味…お見事です!穴子、卵、柚子シャーベットと〆るエンディングも隙なくさすがでした!
ここの酒肴に鮨はやはり期待通り…熟成など経験に基づく確かな技と見事な素材、伝統と革新のクロスオーバーが織りなすまさにアート…そこに村瀬大将の豪快ながら繊細なお人柄、楽しい会話、凛としたオーラの中の優しい空気感が重なって…あっという間の2時間半…お見事なパフォーマンス、これぞ村瀬大将が創りだす極上江戸前鮓の世界でした!
