杭瀬の住宅地にひっそりと佇む名店にお邪魔してきました✨ご自宅を改装されているそうで隠れ家的な面白い内装でしたね。
魚は市場ではなく、日本全国の懇意にしている漁師さんから直接送って貰うそうで、そこからネタにより2,3週間熟成させていくそうです
食材準備の関係上、基本的に当日予約は不可です。
まず一皿一皿の仕事が凄い丁寧なんですよ。お寿司はネタによって、赤酢と白酢を使い分け、それに合わせて醤油も2種類用意されています。
そして熟成されたネタがねっとりとしていてシャリとのマリアージュが素晴らしい✨
千葉銚子の天然鮪は赤身、中トロ、トロタクと順に食べ比べ、剣先イカの隠し包丁に塩をと柚子で頂くのも美味しかったです
〆がお店特製の中華そばで、白身魚のアラからとった出しをベースに全粒粉の麺を頂く、この1杯だけでもお店に行きたくなりますね
お酒のバリエーションも多くて日本酒は勿論、ウィスキーも知多、山崎、白州は揃い踏み、ボトル赤ワインはオーパス・ワンが常備されていましたね
