お取引き様との会食で再訪。お店選びを任せてもらい、あか羽さんを予約しました。
昨年11月以来ですが、今年は年末だけ予約済み。
その時確信した事は、肉に於いては鴨が最強説。
いくら食べても全く胃にもたれず、更に美容や栄養価が高い。これホントの話です。
安いものは硬いしパサついてるし、全然美味しく感じませんが、専門店の鴨はビックリするほど別もの。
11月までは合鴨、12月から真鴨の提供。真鴨の冷凍ストックがあれば、4月過ぎても提供可能。
1日2組最大12名。コース料金は合鴨と真鴨で変動します。

先付から焼物まで1時間。猪、雉子、雀と噛み締めて美味しい肉ばかり。鷹匠鍋前の前菜で、お酒が進みます。
メインの鷹匠鍋。今回は2人だったので、テーブルで店主自ら焼いてくれます。脂が沢山舞うため、3人以上の場合は焼き場は別。
胸肉は3枚、お腹とモモは1枚。
しっかり火入れしても、皮目はカリッとした歯応え。身は本当にふっくらと仕上がってます。
噛むほどに旨味と脂が流れ、余韻が長い。
胸肉は塩、山葵醤油、ポン酢大根おろしで。
どの薬味でも美味しいですが、やはり大根おろしの優勝。胃の中に収まると、食べた分だけお腹が空いてくる。
知人に聞いた時、本当かよって疑っていた頃が懐かしい。食べて分かる鴨の旨さ。
〆の鴨素麺はそぼろを入れると、担々麺に。
冷たくキリッと締まった素麺に絡んで美味かった。
殿様や皇室が好んで鴨を食されていたのが、至極納得。真鴨と比較すると、合鴨は優しい軽さ。
鉄板と火の入りが違う、鷹匠鍋の奥深さは経験しないと分かりません。

同席された方は初めてだったので、鷹匠鍋の歴史を改めてお聞きしたり、初代からのお店の経緯や、松本城に寄贈された鉄砲のお話など聞かせて頂きました。
とても柔和な店主赤羽さんは、名家のご子孫。
鷹匠鍋の火を消さず、後世に伝える伝道師です。
美味しいだけでなく、気持ちまで豊かになる稀有な御料理です。鷹匠鍋万歳
赤坂で目立たずひっそり営業されてますが、分かる人に是非食べてほしい^^
今年の年末は真鴨で忘年会。親友と3人で再訪が楽しみ過ぎる(≧∀≦)再来年まで予約しました笑
