1年前に予約した、あか羽さんにて忘年会。
すき焼きやしゃぶしゃぶより、鴨を選ぶ食センスを持ち合わせた、いつメン親友姉妹との再訪。

いつもありがとうね♪
いつもの蜂の子から始まり、ロースト鴨やタタキでお酒がススム。
タタキは野性味溢れる濃い味。
癖があるから尚旨く、酒にも合います。
猪のお椀は、味がピタッとはまった滋味深さ。
尾道のどんぐりを食べた猪は身も脂も柔らかく、癖は控えめ。出汁の加減も素晴らしい椀物。
産地や食べ物で香りに変わる真鴨のレバー。
癖が強いものと赤ワインを合わせる意味。これが楽しい^^
メインの鷹匠鍋は、店主フルアテンド。
歴史ある鍋と対照的な温度センサーと、空中を舞う脂を吸引する清浄機。不思議なギャップです。
うっとりするほど、妖艶に輝く真鴨。
1年待った甲斐がある見事な深い色。ジビエの力強さと美しさに、皆気持ちが爆上がり笑
赤身から始まり、脂多めの部位と足周り骨付きへ。
基本の焼きは脂側を最初に焼いて、ミディアム。
お願いすればレア目にもして貰えますが、鴨のプロフェッショナルにお任せするのがベスト。
ロースは岩塩でさっぱりとした味わいも良し。
脂が多い部分は、レモンをたっぷり絞った大根おろしが最高。
弾力、滴る肉汁や血、旨味、食後感。
肉はやはり天然真鴨が最強だと、改めて。
鴨脂を吸わせた、葱やセリが驚くほど旨し。
脂で炒めた芹の根っこや茎は、両者独特の癖が相まって更にワンランクアップ。
鴨脂の秘めたるパワーが良く解ります。
〆は濃い鴨出汁と脂を味わう素ラーメン。
スープを飲み干すほど止まらない。これで雑炊したら最高だろうなと邪な考えが湧きます^^
鴨出汁のラーメン店が最近人気のようですが、合鴨のスープはアレで...なら普通の鶏でええやんって思います。
移転前から変わらず、良いお店であり続けてます。
お店の真面目さ、客層の良さも文句なし。
派手な店が多い赤坂エリアで、No1のお気に入り。
翌年分もしっかり予約させて頂きました。
