始めの料理はスッキリながら深い旨味の軍鶏出汁スープ。9月に入荷して今年初めて削るピエモンテ産の白トリュフは部屋全体にそのいい香りが立ち込めます。
グラム単位で削る物だと思いますが、喋りながらなのでだいぶオーバー気味に削ずられている様でした^^リグーリア産の蜂蜜の様なポンテデトイの白も旨い。
京都産赤万願寺唐辛子の煮浸しらしき料理とモッツァレラはその日のメニューに無い一皿で、ひたひたと出汁に浸かっていて美味しいですね。

とてもレアな魚のシブ鯛を炭火でメラメラと焼き上げた後、ちょっとしたハプニングがあり、急遽追加で目光が提供されました。
お店では初めて目光を出すとの事で、たまたま居合わせた常連さんもこういう事は初めてですね、との事。
ラッキーと言ってはいけませんがそのハプニングのおかげでバルバレスコのモンテステファーノとヨスコグラビナーのリボッラルンクと言うワインを特別に頂く事が出来ました♫

極薄のプロシュートでライスを巻いた物、トルタフリッタや黒無花果を包んだ物、自家製パンとラルドなど
色々な楽しみ方で極上のハムを堪能しました。
マシンでその場で練り上げたマスカルポーネジェラートは今まで食べたデザートの中でもピカイチの旨さ!その上にシチリア産のブックラムというデザートワインを少し垂らして食べるとこれまた最高!
この日もお昼の時間ながら4時間超のコースでした。途中ちょっとしたハプニングありメニュー追加ありのライブ感溢れる食事を楽しむ事ができました♫
しかしながらライブ感と言うより、そもそも高橋シェフのライブをかぶりつきで楽しめる空間を設計したお店でしたね。
その日は料理だけで無く音楽の話などを聞けた事も良かったです♫
最高の料理と酒、そして最上のもてなしを受ける事ができるお店。今回も心から堪能しました!
