3ヶ月あけての今年初訪問です。昨年末こちらで蟹を単品で食べて美味しく、今回は蟹のコースと言う事で益々楽しみに席につきました♫
先ずはプレモルを頼み料理を待ちます。
♢ そら豆、ウド、ナマコとコノワタの和物
唐墨、蟹の袱紗焼き
♢ 津居山港 ズワイ蟹
♢ 牡蠣と葱の土手鍋
♢ 岩茸と芹のお浸し
先付けに海鼠、海鼠腸、唐墨!
もはやビールではないので、飛騨の天領「飛切り」 熱燗を。
続いて直ぐさま津居山のズワイ蟹が登場!
そのまま食べても蟹酢でもそれは美味しい♫

春を感じさせるサクサクの天麩羅から3連続の蟹三昧!
食べ足りないと思う事はあるけど、まだ来るか!
と言う事は中々ありませんね。

少しのインターバルがあった後、塩と醤油ダレ、ニ種類の焼き蟹、味噌タンマリの胴体、〆は旨さ沁み渡る蟹雑炊。
期待を大きく超えた津居山蟹の振る舞い。
派手な食材のプレゼンテーションとは無縁なお店(ドーンとズワイ蟹を置いて貰いたいとも思うけど)なので、どんな塩梅で料理が出てくるか分からないのも又楽しいところですね。
この季節最後のズワイ蟹を心ゆくまで堪能しました♫
