和魂漢才 ハスノハナさん
ハスノハナさんに伺うことができました。
中華料理にインスパイアされたフュージョン料理といったジャンルになると思います。
箕面の船場、新御堂筋沿いのロケーションで近隣駅は現在のところ大阪地下鉄御堂筋線千里中央駅になります。今年は箕面船場阪大前駅開業の予定であり開業後は駅近のロケーションになると思います。自動車の場合はお店の前が駐車場があります。
お料理は、総料理長の木村氏に説明を受けながら進んでいきます。お品書きは「晩餐」となっており、食事を食べながら一品一品説明を受けていくとそれぞれの食材に込められたネーミングの意味がわかるようになっています。ご出身の和歌山を含めた土地の食材が選ばれお料理に生かされており、総料理長のお料理・食材に対する思いを感じることができました。どの料理も美味しかったのですが特に一品を選ぶとすれば油で揚げたフカヒレが大変に美味でした。
お酒に強くなくワインの知識もほとんどないのですが、そういった私にも合うようにワインペアリングもしていただくことができました。ワインソムリエのワインに対する愛を強く感じることができたひと時でした。
いずれのお料理もワインも大変に美味しいだけではなく、それを作る総料理長、ワインソムリエの思いを感じることができるお料理店でありとても優雅な時間を過ごすことができました。
