金沢は水曜定休の鮨屋が多い中、木場谷さんは日曜日がお休み。お子さんが小さい頃開業し、一緒に過ごす時間を大切にされていた習慣が、そのまま今も定休日になっていると。
優しいお父さんですね、お人柄がカウンター越しにも伝わってきます。
ずっと来たかった憧れの木場谷さん。
その大将からビールを注いでいただき感激!!
半生のくちこは人生初めて食しました。
3時間、水と酒だけで炊いた鮑はとっても柔らかく、そのままでも美味しい。
さらに肝につけて、余った肝にはシャリをのせてくれます。
赤イカを目の前で3枚におろす包丁さばきも美しい。
ズワイガニにウニソース、下にシャリが隠れた一皿は特に好きでした。
全体的に混ぜ合わせるとまったりとして洋風な趣き。
シャリを小さめにしてもらいましたがお腹いっぱい。幸せ〜
