○もずく酢(沖縄)
○マゴチ
45〜50センチ程ある大きめサイズ。ヒラメより旨いと言う人もいる高級白身。個体によっては微妙に磯の香りがする物もあるが、今日のはキレイな味でした。
○赤貝(宮城・閖上)
味が薄めの個体でした。
○ツブ貝
個人的に大好きなのでツマミで出てくると嬉しい一品。鉄板の旨さです。
○蟹肉入り茶碗蒸し
エビ・カニは出汁がよく出るので、出汁が効いてて美味しかったです。蟹の味をいかすべくかなり薄味に仕上げてあった所も最高でした。
○うなぎ
食べた瞬間に感動的な旨さ。思わず天然ですか?と聞いてしまいました。やはり天然でした。産地は茨城とのこと。その瞬間天然のうなぎ食べたのいつ以来だろう?とかんがえましたが、明確な記憶は無く、もしかしたら初めて食べたのかもしれません。麻布の野田岩で食べた時も天然は入荷出来なかったと言ってた位なので今や天然の鰻は希少です。
ブリと同じように、天然と洋食の大きな違いは脂の質感。天然は脂がのっててもしつこさが無く、結構量も食べれる感じですが、鰻も同じような感じでした。海も川も同じなんですね。
○シマアジ
しっかりした味付け。
○鮟肝、奈良漬け、ワサビ、柚子、ネギ
混ぜて食べて下さいとの事。
鮟肝としては珍しく甘さが目立つ味付けでした。
○カボチャの漬物
珍しいー。かなり歯ごたえがありますが、とても美味しかったです。
◎ノドグロ
当店の名物です。との説明がありました。
絶品です!
◎鯵(京都錦市場の錦胡麻トッピング)
見た目にもこだわった一品。初めて食べた組み合わせでしたが、相性は良好です。
○クエ、クエの出し汁、山椒漬け、青ネギ
プロが作った魚介系の出し汁は鉄板の旨さです。
◎コハダ
◎トキシラズ
脂乗りが強烈ですが、脂にくどさがなくすんなり食べれます。
◎白イカ(スミイカの墨と塩、すだち)
白イカは熱をいれると甘さが際立ってきますが、生で勝負でした。スミイカの墨を練り込んだ塩で食べたのは初めてでしたが、美味しかったです。

◎北寄貝(北海道)
個人的に、貝は握りよりもツマミで食べたい。
でも握りも美味かったです。
◎ウニの海苔巻
ウニの量がヤバイです。
◎煮ハマグリ
甘さ控えめで個人的にはこれ位の甘さがベストです。

初めて食べた組み合わせがけっこうありましたが、どれも相性良く熱心に研究されているんだなと思いました。
呑兵衛としては最初にツマミがたくさん出てくるががとても嬉しい。
値段も銀座ほど高くはないです。しょっちゅう行ける値段ではないですがまた行きたいと思います。
