今回は「鮨 尚充」さん。
なかなか来店出来なかったもののOMAKASEキャンセル枠でなんとか登店。
中目黒の駅からは若干、歩く印象で店構えは落ち着いた雰囲気。翻って内観はなかなかバブバブバブリーな空間…
控え目さと大胆さ双方を持ち合わせた大将とスタッフの掛け合いがされる空間の中で第二部の遅い時間のコースが進んでゆきます…

着席時には既にいくつかの漬物が配膳済みでそれらで最初の一杯をいただいてゆきます。
流れとしてはいくつかの摘みの後、握りと摘みが入り乱れて展開。
やはり特筆すべきものは惜しみない雲丹と鮪の連打。最初の握りの墨烏賊の後の複数の雲丹銘柄とマグロのカマを和えたものに高価なトリュフのスライスを添えたカマトロの旨味と雲丹の旨味の融合で理性が吹き飛ぶ逸品。即、日本酒を注文してしまいました(笑)
その後は脂の乗った迷い鰹。赤酢のシャリの握りは久方振りのコンパクトなサイズの握りでしたが、ネタとシャリの比率がちょうど良く、シャリも優しく握ってあってするりと味わえます。
大人しめな印象の中盤の摘みの後は打って変わって厚岸の中トロからの流れが正にジェットコースター。
脂の乗り方と旨味は色々とあるとは思いますが見た目は普通の中トロが食べてみるとびっくりする美味さ。ネタの良さとシャリとの相性を高める握りの技術ですね…謎のタイミング一緒に出された枝豆もこれまた美味い(笑)
続くやま幸さんの大畑のマグロ背中側の中トロ、赤身も絶妙。ねぎとろキャビア軍艦は初めて食べたのですが、これは何も言えねぇやつですね…
ここで松茸の土瓶蒸しで一気に流れが変わって再度、雲丹が登場。いくらと合わせて食べるご飯物です。文句無し。
この後も鱈の子の摘みが出てくるなど先の読めない流れで久し振りのレアな閖上の赤貝の癖の無い程良い食感を味わうことができました。
鯵は身に入れてある包丁が効いているのか、普段、味わわない鯵で秀逸な舌触りを堪能できました。
この辺りになりますとパーティー状態のテキーラでしたりハブ酒のパンチが舌に効き過ぎたのかラスト二連の雲丹軍艦の味が分からなくなってしまって残念ではありました。
スタッフの方は恐ろしい程、気が利いて恐縮する限り。
