広尾「鮨 陸」
2024年11月以来の再訪。広尾でリブート開店して年明けての食べログ鮨百名店選出おめでとうございます。来年はSilver選出いけそうな予感もありつつも順を追ってBlonzeから駆け上がっていくのを見るのも愉しみなこれからの鮨店。
ちなみにOMAKASEには記載有りますが、ついにこちらの陸さんも値上げフェーズ凸入ということで4/1から値上げする旨の記載有り。今回は数カ月前の予約だったからかなんとか据え置き価格で対応いただくも後になって今迄の価格は逆にボーナスタイムだったんだと思えるようなクオリティに更に仕上げていかれるものと信じています(^ ^

緑茶ハイ
流れとしては前半は摘み、後半の握り。今回は握りの貫数が多い印象で良い感じに満腹に到達した為、特にリクエストはせずに完走。
開始は柔らかめ出汁の小肌のスープ。前回には無かったひらひらと泳ぐような穴子の稚魚の柔らかい歯触りが特徴的。
うるいのお浸しのさらりとした出汁具合と茎部の細かい解像度の歯応えも抜群。いきなり実力の程がうかがえる最初の二品。
刺し身の鰈の身の柔らかさと不思議な甘味、同じく鰈のエンガワでブーストして必殺の鰯巻で掴みもしっかり。この後でもちょこちょこと感じますが、味覚の細かい使い分けがどうやったらここまでできるのか、と思うくらいの多彩さ。
すぎ田さんを彷彿させる濃厚なあん肝と黒龍とのペアリングの後は他では見ないフカヒレの揚げ。ピリリと来る黒七味が握りの前のアクセント。
小肌から始まる握りはここだけの〆の決まり具合で1番、心に残る小肌かもしれません。すっと入ってきて気になるような酸味の無い大将が自信を持って提供する小肌。握りとの相性も抜群な一体感です。
そして旨味を引き出した真鯛の昆布締め、貝なんだけれど貝とは思えない柔らかさと風味のトリ貝、肝との組み合わせもぴったりなカワハギまで怒涛の攻勢。
よもや中トロの前に脳天を突き抜けるような七味のかかった焼き白子ご飯が出されるとは思わずも続く中トロで逆サイドの味覚に襲われて味覚の往復ビンタをされている様。程よく載った脂と咀嚼するとシャリと違和感無く合わされた握りは絶妙。
続く鯨のようなビジュアルの赤身の漬けで更に違う方向を見させられ、子持ちのヤリイカの自然な甘味、蛍烏賊の茶碗蒸しの塩味とで脳味噌左右に振らされてぶるんぶるんです。
と思ったら今度はここで赤貝を持ってくる潔さ。しかも抜群な噛むと跳ね返るも優しく噛み切れる良ネタ。思い切りですね。
最後は王道の車海老、海苔無しの濃厚な紫雲丹握り、いつもの皮面が逆のしっとりしながらもしっかりした穴子、と一連の流れを振り返ると完成していてやっぱり追加リクエストは不要だったよねと思うくらいのコースの完成度でした。
蛤出汁のお椀、玉子焼き、デザートも美味しくいただきました。お酒との相性も抜群でした。
