「鮨 陸」at つくし寿司?
「つくし寿司」by 鮨 陸?
OMAKASEパトロールしていると陸さんの空き枠が!と見てみると、隣の店舗(というより施設手前側)の「つくし寿司」でのランチ営業で陸大将が握る枠があるぞ…!
ということで即予約して久方振りにおうかがい。
訪問は2025年4月以来ですが、今回のハコは本来は二番手の方が主に握る方針だったという同じ建物だけれども入り口が外側にある「つくし寿司」。ほとんど使う機会が無かったので今回は気紛れ?で使ってみたとのこと(笑)
ちなみに鮨 陸店舗は神社側の入り口から内部の通路を通って、つくし寿司の裏側にあたる場所に位置しています。
私含めたお客さんは皆、そちら側で待っていて開店時刻を過ぎても扉が開かなくて建物の中に入れないなぁ、待っていた状況でしたので、つくし寿司の入口は建物の外側だということをお忘れなく…
戸田陸大将は国内の名のある鮨店複数で修行された後の海外での活躍の際にアジアBEST100店OADを4年連続で受賞、2023年からは国内に凱旋して現在に至ります。
六本木のポップアップ店を経て2024年9月からは広尾の店舗にて現在に至りますが、広尾での営業は約1年半が経つ2026年3月までとのこと。区切りの良いタイミングということですかね。場所は未定とのこと。

「鮨 陸」側でもランチは稀にやっていたようですが、今回の「戸田陸 つくし寿司」は握りメインのコースで新鮮。さらっと終わるコースなのかと思ったらがっつりなラインナップで、帰りは急いで帰りました(汗)
なお、OMAKASE店舗ページでは陸大将ではないつくし寿司ランチ握りコース(付け場にいたお弟子さん提供)はあるようなのですが、3末までにリリースがあると良いですね(^ ^
今回の店舗は趣向がこらしてあってカウンターの付け台の下が席ごとに水が上から下に常にちょろちょろ流してある昔ながら?の仕組みになっており、指先をゆすぐことができます。ちなみにサラ・ブライトマン的なオペラは流れていません。

握りのコースは圧巻の一言。
初っ端のあっさり出汁の菜の花のお浸しで舌を整えてからのいきなり定番の小肌からの握りスタートでテンション上がります。
ひたすら握りだけのコースもたまには良いなぁと思いつつも途中の温かい鰹出汁で味わう白子ポン酢もマグロ群に突入する手前の味覚調整では最高。
すきやばし次郎の系譜でのご経験がありながらもシャリは変わらずシャリ酢はそこまで強くなく、すぎたさん寄りの塩梅。
ときには厚目に感じるネタも素材に合わせた弾力に調整してあり、酸味、旨味、自然な甘みとシャリとの調和が半端ないです。
何かを過度に感じることが無い分、更に上がった全体の解像度を感じられるような印象。
こちらの握りコースでは方向性を変えているのか、いつもの鰯巻きやイカ、鰹、車海老、穴子は無いものの寿司定番の小肌、真鯛、平目と縞鯵、と誰しも好きであろうネタの流れで組んである模様。
すだちや柚子の柑橘類を控えめに使いつつ紛れ込ませてくる辺りのセンスがギラリと光ります。
中盤ピークの青森の鮪三連にはノックアウト。三連自体が久し振りでしたが、弾力、旨味、シャリ、煮切とともに大とろの重くない脂と旨味の後の赤身で落差を感じさせた後の再度、中とろの脂を舌に認識させるこの流れは秀逸としか言いようがないです…
鰹ではない藁焼き二種もおもうま過ぎました。
全部、良いのですが最後の追加のリクエスト前のちらし寿司などは、こんな豪華なちらし寿司なんてあったんだ、という至福の時間。この日のネタをこれでもかと詰め込んだ復習タイム+アルファでもう訳がわからなかったです(笑)なんと、干瓢も入っています。
ランチ握りでは五銘柄のみ提供という日本酒も握りに合っていて良かったです。ワインは基本は提供していないみたいですね。
移転後にまた訪問出来たとしたら早くて半年後ですかね、楽しみにしてます。
