天満にある「上本食堂」。この日は7,000円のコースをいただきました。
スタートはラ・フランスに、あか牛の自家製生ハムとビアーブエチーズを合わせた一皿。果実の瑞々しい甘さと生ハムの旨み、チーズのコクのバランスが心地いい。
人参のパンナコッタはとびこ添えで、なめらかな食感の中にプチっとした塩味がアクセント。
中盤はもち豚・サラミ・モッツァレラのアローストをボンベッテ仕立てで。ここで添えられた自家製のワイン塩が本当に美味しく、肉の旨みを一段引き上げてくれる。
メインは奈良県産大和牛の炭火焼き。炭の香りと赤身の力強さを、自家製ワイン塩でシンプルに味わえるのが印象的。
締めは魚介のビアンコ。本来はパスタやけど、今回は特別にクスクスに変更してもらいました。魚介の旨みを吸ったクスクスが軽やかで、最後まで心地よく食べ進められる。
最後はドルチェで締め。素材と構成の良さが際立つコースで、天満で落ち着いて食事したい日にちょうどいい一軒。
