一日8皿限定の超絶とんかつ！奇跡の柔らかさ！/ Sublime Tonkatsu with Miraculous Tenderness✨
アクセスは、みなとみらい線「日本大通り駅」から徒歩6分。
元町・中華街駅からも徒歩7分と好立地。隠れ家的な雰囲気を纏いながらも、意外とアクセスしやすい場所にある。
2025年8月現在、食べログ全国ランキング3位。
いまや超予約困難店となった「揚雫」。
奇跡的に予約が取れ、念願の2回目の訪問。
やはりこの店のとんかつは“とんかつ”という枠を超え、豚肉料理の最高峰に君臨していると確信。まさに我が人生最強のとんかつ。
前回はヒレ、今回はロース。どちらも感動的に旨い。
次回の予約は少し先だが、食べ比べができるようロースとヒレ両方を注文予定。
マスターの人柄も謙虚で素晴らしく、本当はもっと色々話したいところだが、ワンオペゆえ会計時に少し言葉を交わせる程度。それでも心に残る温かさがある。
全国1位になる日も近いのでは？
そう思わせてくれる奇跡のとんかつ体験。

Conveniently located just a 6-minute walk from Nihon-Odori Station and 7 minutes from Motomachi-Chukagai Station,
Yoda (揚雫) feels both accessible and tucked away—a true hidden gem.
As of August 2025, it proudly ranks No.3 nationwide on Tabelog, now among the hardest reservations to secure in Japan.
By sheer luck, I managed my second visit.
Once again, their tonkatsu transcends its category, standing at the pinnacle of pork cuisine. Truly the best tonkatsu of my life.
Last time I tried the tenderloin; this time, the loin. Both were extraordinary.
For my next reservation, I plan to order both for a head-to-head comparison.
The chef-owner’s warmth is undeniable, though as a one-man operation, conversation is limited to brief exchanges at checkout. Still, it leaves a lasting impression.
It feels inevitable that this place will soon take the No.1 spot nationwide.
A miraculous dining experience.

奇跡の柔らかさに息を呑む一日8皿のとんかつ / Sublime Tonkatsu: Only 8 Servings a Day
東急東横線・日本大通り駅から徒歩6分ほど
一日8皿限定（昼4・夜4）という異例の営業スタイルを貫くとんかつ専門店「揚雫（ようだ）」へ初訪問✨
予約困難と言われる超人気店だが、今回は幸運にも友人が予約を確保してくれた
店内はカウンターとテーブルの構成で、落ち着いた空間に仕立てられている
サクサクを超えた軽さの衣と、驚くほど柔らかく火入れされた豚肉の調和にただただ感動…
箸で持ち上げただけでほろりと解ける食感は「人生一のとんかつ」と言っても過言ではない
また、添えられたキャベツ、炊き加減抜群のごはん、味噌汁まで全てが隙のない完成度✨
時間と手間を惜しまず丁寧に仕上げられた一皿に、確かな美意識が宿っていた
再訪は容易でないが、記憶に残り続ける圧巻の一食

“Yoda” is a renowned tonkatsu restaurant known for its unusual style of serving only 8 plates per day—4 at lunch, 4 at dinner✨
Though it’s notoriously hard to book, a friend luckily managed to get us a reservation
Inside, both counter and table seating create a calm, minimalist space
The tonkatsu was extraordinarily tender, with a light-as-air crust and juicy pork that melted with just a lift of the chopsticks
It wouldn’t be an exaggeration to call it the best tonkatsu I’ve ever had
Even the sides—shredded cabbage, perfectly steamed rice, and miso soup—were flawless✨
Each element showed care, balance, and an uncompromising dedication to quality
While a second visit won’t be easy, the memory will stay with me

揚雫のとんかつは、ただの“とんかつ”の枠に収まらない。
豚肉料理界の最高峰に君臨していると言っても過言ではない。
噛めば香りが立ち、旨味が溢れ、余韻が消えない。
これをとんかつと呼んで良いのか迷う笑
人気上昇に伴い、予約難易度も更なる高みへ。

This was my third visit to one of the greatest tonkatsu destinations in Japan.
Ranked #3 nationwide for tonkatsu on Tabelog (as of Oct 2025) —it has undoubtedly become a national legend.
We ordered both the fillet and the loin to share.
Both were insanely delicious — and the result… a draw!The ultimate showdown of the best tonkatsu in my Unimaru history ended in a tie ✨
