綺麗な川で採れたナマズ。トマトのすり流しと
青梅の蜜煮、酢漿草(カタバミ)の葉の酸味とが
淡白なナマズを主役にしてくれる逸品

30〜40分じっくり炭火焼きなので頭から尻尾
までカリッとフワッと。

小麦粉と葛で出来た素麺のウニ酢橘添え

クセのない柔らかいウズラ肉と加茂茄子
焼きナスのペーストと一緒にウズラ肉はお箸
で裂けれるほど柔らかく仕上げてます

鱧の朴葉の蒸し寿司…鱧のタレ焼きと新生姜
天然スッポンの雑炊…ナマズと同じ川で採れた
スッポンは上品なお出汁でした
鮎ととうもろこしの釜炊きご飯…鮎の香ばしさ
ととうもろこしの甘みがいい薫り

山梨県産の桃。柔らかくて季節を感じますね

店主の方が目の前で仕上げて下さいました
大納言小豆を…京丹後宮津産の山芋で五色の
短冊を見立てた餡を上から包み仕上げた逸品
甘さと大納言の旨さとお薄がなんともほっこり
笑顔になる最後のご馳走でした
山の物をこんなに美味しく、そして丁寧に作られる
店主の思いが一品一品に感じられるコースでした。
食材、素材、下拵え、味、視覚、すべてにこだわりを感じられるお料理です。
女将さんの笑顔やお気遣いも自然でこちらが
つい〜うっとりしちゃうくらい〜店主との阿吽の呼吸が垣間見る事ができて…とても幸せな空間でした
もちろん❗️お料理でお腹も目でも心でも満たされました❗️
都会では頂ける事のないお料理です
