前菜のウニと猪の臭みが少々気になりましたが、フルーツの酸味と合わせるのはよかった。あとウニの温度はもう少し下げたほうが好みかな。花束みたいな前菜が1番お気に入り。この食用の花が苦いかなと思いきや、そんなことなくいい仕事してた。緑色の森みたいな前菜には、鮑やヘーゼルナッツ、黒米、銀杏などが入ってて、全てがみじん切りなってる面白い一品。これはごちゃ混ぜにして食べる方が、バランスがとれて美味しかった。
みんなパンに触れてないけど、美味しかった。外の焼き加減と中の水分量が好み。小麦の味も好きでした。オマール海老はシンプル美味しい。
みんな普通だと言っていたが、私はシンプルに美味しい食べ物ほど難しいと思う。新しさより、温故知新を感じた。ソースが美味しい。私は好き。
ほろほろ鳥は感動した。私はただ柔らかいのには何も感じないというより、柔らかさを追求し、半生で鳥独特の香りや舌触りが苦手。ここは違う。半生のギリギリ一歩先。柔らかいし、しっかり火も通っているのに、水分がギュッて詰まってる。そして皮はパリってしてるのに、皮側の肉の火が通り過ぎてない。すごい好みでした。
