穏やかな海の景色を眺めながら、心落ち着く時間を過ごせる「旅荘 海の蝶」。この日は、総料理長・江口健一氏が手がける「弥生 結」コースを堪能しました。
まずは先付けから。「三重地酒『昨』酒粕豆腐」は、なめらかな口当たりに酒粕の香りがほんのりと広がり、上品な味わい。「真珠貝とうるいのぬた和え」は、シャキシャキとした食感とまろやかな酸味が絶妙に調和し、「鰻まぶし寿司」は香ばしいうなぎの風味が口いっぱいに広がります。
御造りには、伊勢海老・本マグロの鮨が登場。ぷりぷりとした伊勢海老の甘みと、脂ののったマグロの旨みが際立ちます。焼物の「鮑・青さと海老のおこげ」は、磯の香りと香ばしいおこげの組み合わせが秀逸。
蒸物の「伊勢健康豚角煮茶碗蒸し」は、やわらかく煮込まれた豚肉と滑らかな茶碗蒸しが相性抜群。そして、メインの「松阪牛の陶板焼きとすき鍋」。肉の旨みが凝縮され、噛むほどに濃厚な味わいが広がります。
食事は伊賀米とともに、おばんざいの「伊勢神饌鶏南蛮漬け」、伊勢志摩産糸海苔の留椀で締めくくり。デザートには、自家製フルーツ杏仁が提供され、爽やかな甘さが最後まで楽しませてくれました。
三重の食材をふんだんに使い、一品一品にこだわりを感じる極上のコース。美しい海を眺めながら、贅沢な時間を過ごすのにふさわしい一軒です。
