胸を張って進めたい日本料理店☺️
大通りから1つ入った通りに突如現れるお店、窓もないので中の様子は入店するまでわかりません❣️
ドキドキしながら扉をあけるとすぐにカウンターが現れます
このカウンター席が本当特等席✨
奥には個室もあるのですが絶対にカウンターがおすすめです

なぜこんなにゴリ押しするかはすぐにわかるかと❗️
作るところをかなりたくさん見ることができるからです
いやどこもそうでしょとなるかもですが魚を切るところはもちろん
わさびを擦る・鰹節を削る・出汁をとる・ゴマを炒る、擦るなど通常見えないところで仕上げてしまうような細かい部分も目の前で行ってくれるのです‼️

目の前で作るところを見るとさっきまであんな状態だったのにな、なんて思いながら食べることができてより深く味わえました~
また鮮度にも拘っており獲れたてすぎて死後硬直前ぷるぷるのカツオがびっくりする美味しさでした
カツオ=大味、薬味をもりもりで食べるのが最強と思っていましたが鮮度故に独特の匂いや濃いめの味ではなく繊細な味がしました...あえて薬味を使わないところも秀逸

また全体的に働いている方が若め。
料理長らしき方も若いな~とみていましたが本当に若かった...(29歳だそう。)
京料理いそべ、分とく山で修行の上オープンされたらしく年と技術って比例しないこともあるんだと驚きました。
(もちろん頑張って修行された故だとは思いますが。)
