喜多方市塩川地区の「春日遅遅」の濃厚煮干ラーメン、美味しかったです。2024年7月にオープンした新店で、店主は 食べログ100名店、東京都台東区の「麺処晴」のご出身です。濃厚煮干ラーメンのスープは、粘度高めの濃厚鶏白湯をベースに、煮干し特有の旨味も苦味もクセも全てが凝縮したニボ感マックスの濃厚さです。濃厚煮干しスープは、煮干し以上に塩分強めの味付けが多いですが、そこまで過剰に塩分が強くなく、濃厚煮干しとのバランスのとれた絶妙な味付けです。ニボシストにも大満足のハイレベルなスープです。麺は、東京の「麺処晴」と同じ加水率低めの中細ストレート麺で、ハリのあるパツンとした食感で、芯が残るボキッとしたかための歯応えが濃厚煮干しにベストマッチです。麺を噛むと小麦の風味が口の中に広がります。タマネギと岩海苔がバツグンのアクセントになり、しっとりした鶏チャーシューも最低限の味付けで、濃厚煮干しスープの美味しさを引き出しています。間違いなく、喜多方に新風を吹き込む店主渾身の一杯です。和え玉も注文可能です。おすすめです。
