4月・5月は「天ぷらコース」とのことで、2ヶ月ごとにテーマが変わるのも楽しみですね。
新幹線・浜松駅北口から徒歩10分。18時開店まで14分しかなかったものの、「勢麟はボリュームがすごい」と聞いていたので、あえて早足で歩き、お腹を空かせて向かいました。
店内はカウンター8席のみ。和風の木を基調とした素敵な内装です。
クロークでジャケットや鞄を預かっていただき、スマホだけ持った身軽な状態で着席。
招待してくれた知人は、すでに何度も訪れている常連。「今月は天ぷら屋ですよ」と一言。
本日の食材として、かわいい穴子やハタ、車海老などを見せていただき、記念撮影も。
生唾ごくり…ではなく、ビールを飲みながら、長谷部シェフの鮮やかな包丁さばきに見とれます。
コースは、オコゼのお吸い物からスタート。
味付けは醤油のみですが、根魚独特の旨味と風味がしっかり感じられます。
続いて、ハタの刺身、青柳の酢味噌和えと刺身が続き、いよいよ天ぷらへ。
大きな車海老×2本、アスパラ、メイタガレイ、新玉ねぎ、メヒカリ、ヨシエビ、青柳の貝柱、たらの芽と、バラエティ豊かな素材が次々と揚げられていきます。
締めには、短めにカットされた8.5割蕎麦。
出汁はやや薄めで、蕎麦にしっかり絡むため、蕎麦湯は不要でした。
最後は、アイスクリームスクープの温度管理にまでこだわったスイーツと、香ばしいほうじ茶。
気付けば2時間半、満ち足りたコースの終了です。
次回はまた違うテーマのコースを、ぜひ味わいに訪れたいですね。
