今回は、秋田県湯沢市にある佐藤養助 正心庵での食事が1番の目的でした(^_^)v訪れたのは4月のまだ寒い日で、店内に入ると料理長とカウンター席が出迎えてくれます。予約制の特別感もあり、期待が高まります♪
この日は、春の味覚であるフキノトウやタラの芽を頂きました。薄い衣でカラッと揚げられた天ぷらは
素材の風味を引き立てる絶妙な仕上がりで、とても美味しかったです^_^車海老の提供方法はコースの合間に揚げ方を変えながら3匹出してくれるという贅沢な演出で、それぞれ違った食感や風味を楽しむ事が出来ました♪
料理長は、東京の名門 山の上ホテルで経験を積まれた方で地元である秋田に戻ってきたそうですm(_ _)m洗練された技術と心のこもったサービスが随所に感じられ訪れる価値ありと実感しましたー!!
締めには、この店ならではの特別な稲庭うどんを
頂きました。八代目佐藤養助が手縫した貴重な稲庭うどんをせいろで頂きました♪秋田の冷水でしっかり締められたうどんは、喉越しが驚くほど良く滑らかな食感がたまりませんでした(๑>◡<๑)
秋田県の素材へのこだわりや丁寧な仕事ぶりを感じられる数々に感動し、稲庭うどんの美味しさも格別でした。
佐藤養助 正心庵は、間違いないと感じました。
