六本木駅からすぐのところにあるビルの地下にニューオープンしたお寿司を食べに行ってきました。旬の食材をコスパ良く堪能出来るコースがオススメ!

今回も気になるメニューが沢山あったので、気に入ったのを紹介
◎飲み放題付きコース
・三陸産生若芽ポン酢
▶︎シャキっとした食感が良い生若芽で箸が止まりませんでした…。おかわりも出来るので箸休めなどにも良いです。
・切り立ての酢飯海苔巻き
▶︎新潟県産の「瑞穂の輝き」というお米で米粒が大きく甘さがあるのが特徴。赤酢と米酢をブレンドした酢飯を炊きたてご飯で作ってくれました。切り立ての酢飯は酸味が少し強めで、また違った美味しさ。寝かせると甘味を増すという事で、握りへの期待が高まりました〜
・自家製豆腐 銀餡
▶︎大豆の味が結構感じられる滑らかな豆腐でおおしかったです。
・あん肝ムース奈良漬け
▶︎あん肝はグラニュー糖でキャラメリゼされていました。細かく刻んだ奈良漬けの食感と濃厚なあん肝はお酒のアテにピッタリです。ワインともよくあいました。
・ウニ蕪 五島うどん
▶︎蕪のすりおろしとバフン雲丹、オリーブオイルと塩で味を整えたシンプルな味付けで、ツルツルとしたうどんと雲丹が絡んで美味い。
・宮城県産 平目昆布〆
▶︎3日ほど寝かせ熟成させた昆布〆らしく、ねっとりと旨味が増していて美味しい。甘味の増したシャリが美味〜
・静岡県産 金目鯛 すだちマルドン塩
▶︎少し甘みのあるのが特徴とマルドン塩とすだちが金目鯛の上品な脂の甘みを引き立てて美味しい。
・長崎県産 小肌 シェリービネガー〆
▶︎シェリービネガーで〆られており、噛むほどに広がるほのかな甘みと香りと溢れる旨味が最高でした。
・帆立燻製 フィンガーライム
▶︎胡桃のチップで燻製した帆立とフィンガーライムのプチプチとした食感が美味しい。燻製することで香りと帆立本来の甘さが引き立ちたまりません。調理の様子も楽しかったです。
・鮪おはぎ(+2000円 うにトロ包み)
▶︎今回はプラスでうにトロ包みに変更しました。絶対に変更した方がいいです。
雲丹は新鮮で全く臭みなどは無く、シンプルド直球に美味い。トロと雲丹が蕩けていき、シャリと混ざりあって口の中で完成する様は何度でも味わいたいです。美味すぎる〜…
・いくらの小丼ぶり
▶︎いくらととびっ子、細かく刻んだリンゴの丼ぶりでした。リンゴって合うのか??と思いましたが、いくらととびっ子のプチッとした食感とりんごのシャキッとした食感とフルーティさが絶妙で美味しい。柚子の柑橘系の香りもまた良きでした。
・白子茶碗蒸し
▶︎白子はすり潰されていて卵を感じる茶碗蒸しとよくあいました。濃厚〜!
・青森県大間 赤身漬け タスマニアマスタード
▶︎大間のマグロ!!マイルドな酸味とプチプチとした食感のタスマニアマスタードがいいアクセントになって美味しいです。
・青森県大間 中トロ
▶︎シンプルにみんな大好きな味でした。噛むほどに溢れる脂の甘さはまじで美味い。
・長崎県産 カマス炙り
▶︎冬が旬のカマス!めちゃくちゃ嬉しい〜
しっかりと脂が乗っており、皮目を軽く炙っているため香りが引き立ち美味い。たまらん。
・熊本県産 車エビ
▶︎絶妙な火加減で少しレア目に火を通しているらしく、海老の風味を楽しみつつも加熱することで甘みも増した良いとこ取りで美味かったです。
・穴子 マルドン塩
▶︎サッと炙った穴子で、普段はタレで頂くことが多いですがおすすめのマルドン塩で注文してみました。穴子本来の甘みがより一層引き立ち美味い。これは是非塩で食べてみて欲しい。
・本日のお椀
▶︎魚のアラと鰹節で出汁をとっていて、香りがとてもよく温まる一杯でした。
・りょうけんの玉子
▶︎カステラみたいな卵焼きスイーツです。豆乳のホイップといちごが添えられていて見た目も可愛く美味しかったです。
品数もクオリティも大満足のコースでした!
