デザート
まず驚いたのが油と衣の量。
揚げた時の香ばしさだけでなく
素材の持つ香りを油が邪魔せず、
さらに非常に薄い衣なので素材の
食感や旨味をダイレクトに感じる。
天ぷらは主に自家製の塩か
レモンでいただくスタイル。
塩は非常に粒がきめ細かく、
塩味が控えめでうまい。
どれも芸術的な出来栄えでしたが
特にさよりを三つ編みにしたり、
稚鮎が立つなんて、どうやったら
そんなことができるのか!と
驚きの連続でした。
極めつけは、さつまいもに砂糖と
ブランデーを両面たっぷりつける
食べ方は衝撃的!!
甘過ぎることなく、最後にブランデーの
風味がふわっと感じれる一品。
本当にどれも素晴らしく
最高に美味しかったです(^^)
