他の鮨店とは違う感じで美味しいと聞き
とーっても気になったので行ってみた。
久屋大通駅からも近くオシャレなお店が多いエリア。
清潔感漂う店内
1枚板のカウンター、その奥に可憐な生花。
見事な包丁達。
無駄なくオシャレな佇まい。
カウンターでコースをいただいたが
熟成させてバランスのいいネタとシャリのバランスが
秀逸。
普段よく見るネタ(無論、産地等は違うが)に対しても
隠し包丁を入れていて、食感や味わいに変化が起きて
全く別物に感じるネタもあるほどの美味さ。
最初のホタルイカと行者ニンニクの組合せから
期待感が高まり、他店が茶碗蒸しを出すから出さないという拘り。
個人的にその考え方に共感!!!
お鮨以外でも旬の食材への拘り
彩りや味付け等も細やか
ワカサギと春の山菜天ぷらの組合せや八寸にも驚き
見た目も味も抜群。
大間産の鮪はやはり美味しくて
自分の好きな赤身も漬け具合、最高の味わい
ディジョンマスタードで食べるの初だったけど
これまた合う。
穴子の炊き具合も最高!!
