久しぶり、二度目の訪問だった「よし澤」は、10名掛けのカウンター、4部屋ある個室も含めて総て満席で、従業員も一様に忙しそうにしていた。カウンターの客人は、ほぼ皆常連であろうことが会話の様子から察せられた。そんな状況でも、従業員諸氏は我々にも親し気に接してくれる。気分が悪いはずもない。
相当多忙であろうはずなのに、長く待たされることもなく、いいタイミングで、美しい器の数々と共に力のこもった一品一品の料理が供される。実に小気味良い。考え尽くされた品々は、感服する以外にないのだが、前回も頂いた鰆の藁焼きが、さすがに看板料理と言うだけあって、最も強く惹きつけられた
そう言えばそうだったと思い出したのが、白飯を順番に4段階に分けて食べさせてくれること。アルデンテから始まって3段階の最も良く炊けた状態まで堪能させてくれる。最後はお焦げ。これもたまらない。最後の和栗のティラミスまで、全品完食。
常連と思しき客人の中には、来月の予約を取っている様子も見受けられた。中には、一人でこの店の料理を楽しみに来ている食い道楽らしき御仁の姿も見え、こういう楽しみ方もありかな…とほくそ笑んだ家内が珍しく、秋の味覚は頂いたから、次はクリスマスの時期あたりに、どんな料理で楽しませてくれるのか、再訪してみたいと囁いた。単なる和食の店でない、「日本料理」の王道、よし澤。是非また違う季節の料理を楽しみたい。…ご馳走様でした。
