地元食材を中心に、素材の組み合わせや調理法で新しい“おいしさの体験”を提案してくれます。
アミューズは枝豆ペーストと鯵のなめろう。サクサクの生地とオリーブオイルの香りが広がる華やかな一皿からスタート。
「クスクスととうもろこしの冷製スープ」は、“スープ=液体”という固定概念を覆す、まさにイノベーティブな一品。
岩槻産インカのめざめのミルフィーユにパルミジャーノ・レッジャーノソースを合わせた特別仕立て。
九州産の鰻は開かずにぶつ切りで焼き上げ、脂を逃さず旨みを凝縮。ミョウガときゅうりで“うざく”を再構築したような香味の妙。
鴨料理にはインカのめざめのペーストと「ダビデの星」というオクラを添え、力強さと繊細さを共存させています。
デザートは桃づくし
マスカルポーネとヨーグルトのソースに、桃のかき氷・コンポート・ジュレを重ねた爽やかな甘みが印象的。
最後は焼きたてフィナンシェとバスクチーズケーキでフィニッシュ。
