過去に数回利用させて頂いてまして、今回はかなり久しぶりにお邪魔させて頂きました。
値上がりが当たり前のお鮨屋界隈ですが、鮨一正さんは頑張られているなと思います。
個人的には、他の鮨屋よりもつまみが御料理になっているなという印象です。
写真を見て頂けるとわかると思いますが、季節の野菜が使われていますね。
煮蛸の上にオクラを叩いたものがかかっていたのですが、煮蛸のほぐれ具合と粘りのあるオクラとの一体感が素晴らしかったなと。あん肝のなめらかさも凄かった!
炭火で皮目を炙るのも良いですね!
握りは酢を使い分けた2種類のシャリをネタに合わせています。
赤貝がヒモ入りで握るのが個人的に好きで、赤貝使うなら他の鮨屋さんもそうしてほしいなと思います。
かわはぎの肝も、切り付けが大きめでたっぷり入ってます!嬉しい!
やま幸からの鮪も良かった!特に追加した血合ぎしは感動物でした。
かなり久しぶりに来たことを後悔しました笑。もっと定期的に通えば良かったなと。
周辺は有名鮨屋も多いエリアに鮨一正さんはありますが、一正さんにして良かったと思えるはずです。自分はそう思います。
また行きます!
