ビルにひっそりと潜む、隠れ家的お鮨屋さん。日宝シルキータワーの1階の1番奥にお店があります。
本日の訪問では、1品目から鱧の土佐酢ジュレ。清涼感あるスタートで、この時期旬の鱧から始まるなんて贅沢...。勿論めちゃくちゃ美味しかったです。
シマアジのねぎペースト和えは香味が絶妙で、アオリイカやサワラの繊細な包丁も職人技を感じさせます。調理方法も目の前で丁寧に作られていく様子を見れるのも嬉しいです。
帆立の海苔巻き。帆立×海苔は初めて食べる組み合わせ。磯の香りと甘みの対比が印象的でした...!
車海老や雲丹も鮮度抜群で贅沢すぎる品数が出てきます。天麩羅は社オクラ 、タチウオ 、椎茸 、鯛の大葉まきの4品。揚げたてが提供され絶品...。
そして10品目、きんきの小丼が1番好みでした。
割下が香るすき焼きと続き、大トロ・赤身漬けで本流の江戸前へ。
甘味のプリンはプレーン、アールグレイ、ジャスミンから選択できたので、香り高いアールグレイを選びました。
プレミアムなラインナップながら、一品一品が主張しすぎず、構成の妙で全体に調和がとれている、技術と美意識が共鳴する、記憶に残るコースでした。
