ミシュラン星付きの名だたるレストランの中でも、私が一番好きなのはここ「エスキス」。
繊細で詩的、そしてどこか自然と共鳴するような料理の数々に、毎回新しい発見があります。
2階目の訪問です。
この日のテーマは 「Une très légère oscillation(限りなく繊細な揺らぎ)」。
フレンチの技法に日本の季節感や素材を重ねたコースで、ひと皿ごとに思索的な静けさとエネルギーを感じます。
• Fragilité シマエビ、フランボワーズ、弓削瓢柑
→ 最初のひと口から世界観に引き込まれる、美しい導入。甘みと酸味、香りが溶け合うように消えていきます。
• Musicalité 貝、金柑、ゼリ
→ 食感と香りの“リズム”が楽しい。まさに音楽のような一皿。
• Symbiose 茸、猪、トリュフ
→ 大地の香りが濃厚で、生命力を感じるメイン。
• Il neigeait sur l’océan 甘鯛、根菜、ふきのとう
→ 雪のように軽やかで、和の静寂を纏った一皿。
• Brume 鴨、キャベツ、菊芋
→ 旨味の余韻が長く、香りが立体的。
• Heritage 日向夏、木の芽
→ 爽やかで、香りの記憶を残すデザート前のインタールード。
• Plaisir パリ・ブレスト
→ 軽やかで、最後まで幸せな余韻を残します。
