福岡グルメ旅
真の更科蕎麦を伝承する名店「あ三五(あさご)」さんへ。
金曜の開店前に到着。予約なしでしたが運良く入店でき、至福の時間が始まりました。
■「本物」を知る店主の教え
まず印象的だったのは、店主が語る蕎麦のお話。
特に驚いたのは、「本物の更科蕎麦は、温かい方が香り高く、喉越しが良く、汁との絡みが良い」ということ。
蕎麦は冷たい方が美味しいという固定観念がありましたが、こちらの温かいお蕎麦をいただき、その概念がガラリと変わりました。
■昼そば懐石(3,960円)+おまかせ
今回は懐石に加え、おまかせで様々な種類をいただきました。
⚫︎そば粒とろろ:雑味なく、スッと溶けるような口どけ。
⚫︎そばずし:蕎麦・海苔・具材が三位一体。これまでの「そばずし」のイメージを覆す一体感です。
⚫︎花巻そば:海苔と蕎麦が見事に調和。温かいのにコシがあり、凛とした美味しさ。
⚫︎そば饅頭:美智子様も愛されたという一品。素材を活かした上品な甘さが締めに最高でした。
■おまかせで堪能する「真の更科」
蕎麦の芯のみを使用した真っ白な蕎麦は、見た目も美しく雑味ゼロ。
胡麻切りそば:温かい蕎麦を常温の汁で。驚くほど香りが立ち、蕎麦との融合に感動。
その他頂いたお蕎麦
柚子切り、しそ切り、湯葉、からすみ、十割、二八…と、どれもが「本物」という言葉がしっくりくる逸品ばかり。
■総評
蕎麦そのものの完成度はもちろん、店主の「食べ手に寄り添う姿勢」が素晴らしく、この日の訪問は私にとって特別な思い出となりました。
