創業から140年 ひつまぶしレジェンド店の松坂屋支店。コース内のひつまぶしは、通常の単品サイズにしました。備長炭で焼き上げた鰻は大変美味しいです
コースの最後のほうに出てくる会席版は、普通はお椀ですが、特別に通常サイズのお櫃のひつまぶしにしてもらいました。備長炭の高温かつ安定した火力で焼き上げた鰻は、表面の硬さと中の身の柔らかさのバランス、旨味と香りが素晴らしく、食材の質/焼きの技/伝統のタレが上手く調和しています
コース料理は、全てレベルが高く量も充分ですが、特に興味を引いたのは、白焼きとキャビアの組み合わせ。キャビアの香りで奥行きのある味になり、大変美味でした
