私の誕生日記念に何か特別なランチを!と探していたところ、妻のインスタで春日町にある「鮨徳」さんが自動紹介され、食べログで調べると非常に評価の高いお店だと分かりました。しかもランチもやっている事が分かり、それならと伺う事にしました。
仙台出身の兄弟でお店を切り盛りされており、親方は銀座の「鮨竹」さんで、弟さんは日本料理の「新ばし笹田」さんで修行を積んだあとの仙台凱旋です。しかもご実家は以前は魚屋(現在は定食屋)をいとまれておりお父様は魚業界の名だたる肩書きを沢山持つ特別な方です。
本日お願いしたのは、握りのコースの「御決まり」(6,600円)です。
親方は銀座で修行されただけあって客の扱いがとても上手です。私が泥障烏賊の飾り包丁で無数に鱗のように立ち上げているのを見て「仕込みが大変ですね!」と言うと、「ええ。どうせ暇なんでやってます…。」みたいな返し方をされ、客の笑いを誘います。
こんな感じで場の雰囲気を和ませ客を楽しませるところは、味以外でも評価されているのでしょうね。
シャリは江戸前の赤酢でまろやかでトゲがなく、ササニシキということで、サッパリとして美味しいです。
ネタは泥障烏賊・蝦蛄海老・小鰭・北寄貝・蛤が好みの味わいでした。蛍烏賊をミンチ状にしたのも珍しくまた車海老のネタを人肌の温度まで温めており、海老の旨みを十分に堪能させてもらいました。
その他、ネタの表面に煮切り正油を刷毛で塗ってくれるため自分で醤油をつける必要は無く、不慣れな私でも上手にお寿司をいただけるので助かります。
