妻に連れてきてもらい、数年ぶりに再訪。
スパークリングで乾杯した後、初めの一貫はサワラです。身が炙ってあり、香ばしい。身質が柔らかで、うなぎの白焼きみたいにほぐれていく。しゃりは硬めです。私の好みですが、もう少し柔くてもよいかも。
アジには赤酢のシャリを合わせてあります。寒ブリの歯ごたえがまたいい。
合いの手に茶碗蒸しが登場。こばしらの旨味とカニのエキスで酒が進む。このあたりからビールの酔いが回ってきて、スポンサーである妻への気兼ねも薄れて心置きなく日本酒にスイッチ。
イシガキダイはねっとりとして、鮨ダネが必ずしも鮮度ばかりではなく、熟れ具合も大切だということが分かりますね。女性もおんなじなんてことは口が裂けても妻には言いません。
能書きが好きな私には、ご主人が他の客に披露するうんちくをBGMに飲むのも乙なもんです。酔ってるからだいたい忘れちゃうけど。
箸休めの野菜にはスズキともう1種の白身魚を焼きほぐして作った味噌を付けてある。なんかデンブみたいな不思議な食感。
カニクリームコロッケはワサビで頂きます。これはちょっと醤油を垂らしたほうが、よりうまくなりそう。
マグロは赤身、中トロ、炙った大トロが3連発。大トロはあたかも焼肉鮨のような味わいです。これ以外にもエビのすり身入りと思しき卵焼きやらあん肝軍艦、アナゴ、マグロとカンピョウの鉄火巻とフルサービスで最後まで飽きません。
この内容と銀座の場所柄を考えると、やっぱりコスパは素晴らしいです。一度行ってみても損しませんよ!
