柔らかく火入れされたタコが美味しい。
前菜から完成度が高かったです。
・貝と夏野菜のインサラータディリーゾ
冷製リゾット風サラダ。貝の旨味と夏野菜のフレッシュさが絶妙にマッチし、爽やかなアクセントに。
・高原黒牛、タン、千本筋、アキレス腱、テールのフリット
色んな食感が口の中に広がり美味しかったです。
・金目鯛と新茶の葉
新茶の香りがふわりと広がり、脂ののった金目鯛との相性が抜群。和の要素が上品に組み込まれていました。
・Gardenia ガルデニア
香りと味がリンクする演出系の一皿。アロマティックで記憶に残る逸品。
・前田農産「きたほなみ」のウンブリケッリ × ふなき農園「ふるーの」のトマトソース
モチモチの手打ちパスタとトマトソースの濃縮感が秀逸でした。
・イベリコベジョータ 炭の香り ペペロナータヴェルデ
ジューシーで旨味たっぷりのイベリコ豚に、炭火の香りが重なり、甘みのある青パプリカソースと絶妙なバランスでした。
・とかちマッシュのジェラート
きのこのジェラートという意外性ながら、芳醇な香りとミルキーな口当たりで、食後にもぴったり。
・ビアンコマンジャーレ/食後のお飲み物と小菓子
余韻を楽しむ静かな時間。最後まで丁寧な仕上げでした。
モダンで落ち着いた空間。スタッフの所作や説明も洗練されており、コースの一皿一皿が舞台のように展開されます。食材の出自や背景も丁寧に紹介してくださるので、食への理解と感動が深まりました。
