塚田大将の手のひらから
溢れ落ちそうなほど大きな牡丹エビ、
今朝獲れのソウダガツオの凝縮した身質と旨味、
上品でキレの良い葉ニンニクとの相性も抜群。
北寄貝、答志島のトロ鰆の繊細な火入れの妙。
鮮度抜群のニシンの身も脂も美しく透き通り
どこまでも上品です。
2025年10月からお昼の握りのみのコースが
廃止になるそうです。
せっかく福井県まで遠征したのであればつまみもいただきたいな〜と今まで握りのみのコースでしたので、この日を楽しみにしていました。
結果はもう〜素晴らしかったです!
実際には手間がかかっていたり複雑な工程があってもあたかも何も手を加えていないように感じさせる簡素さ、凛とした美しいおつまみと素晴らしい鮨種の下拵えにシビレました(๑>◡<๑)
鮨種は
皮を残し驚きの香りと旨味の余韻が長い真鯛、
剣先イカの隠し包丁、
豊漁の秋刀魚は脂のみに頼ることなく
身の旨味や鮮度で魅せる表現力も素敵。
フルーツぐらい甘ーい糖度ある甘海老、
どうしてこんなに皮が柔らかいの⁉︎と
驚愕の新イクラの皮。
かろうじて形を保つ液体に近い穴子の仕上がり。
ジューシーな玉。
素敵すぎます♡
酢飯は
初訪問の際から「塚田さんのシャリが好き」と心の中で歓喜しながらお鮨をいただいておりました。
季節の変わり目、今日は何かが違いました。
おつまみと鮨種がミラクルに好みでしたので
少し残念な気持ちになりましたが、
こんな日もありますよね。
どうしても期待してしまいます。
わがまま言ってごめんなさい。
また訪問する機会を楽しみにしています。
