最近は肉が多かったので、紅葉も近いし、そろそろ和食も愉しみたいな、ということで、久しぶりに伊勢丹の地下で鯖寿司のいづうに寄り道をしました。
選んだのは、鯖が3ヶ、鯛が3ヶの盛り合わせ。
カウンターの上には木箱に入った笹寿司も並んでいたので、こちらも1つ。
鯖寿司というと、祇園の2店と下鴨の1店を回っている感じで、本日は祇園の老舗いづうです。
最初に笹寿司。
ご飯の中には白ゴマと柚子が入り、ふわっとした食感。
鯖寿司のようなもっちり感はなく、胡麻と柚子の風味、いい感じでした。
そして鯖寿司。
皮に身の付いたものと、皮のない身だけのものの2種類です。
皮身は脂の乗った鯖の味わいと、皮を噛むと香る風味、まさに鯖を喰らう味わい。
身だけの方は、酸味の効いたもっちりの酢飯とほろっとした身の混ざり具合、いいな。
酢がしっかりと効いた寿司に、生姜も美味しい。
ふつうはしないものですが、奥出雲のお気に入りの醤油を1滴だけ、ぽとりして、いただきました。この食べ方が好きなもので。
