虎ノ門ヒルズにある予約困難な北京ダックのお店に連れて行ってもらいました。今夜は「北京ダックマニア」で乾杯です。ステーションタワー4階のレストランフロアにある「餃子マニア」のまるで従業員通用口のような鉄の扉。その向こう側に、秘密基地のようなカウンター8席の空間が拡がっています。コース6,000円です。
黒龍ビールで乾杯して、まずその美味しさに驚きです。ビールと紹興酒のカクテルでこの雰囲気にぴったりです。鴨のジャーキーからスタートします。パリパリ感と適度な脂、クミンなどのスパイスのブレンドが香り高く秀逸です。鴨のスープにはムネ肉と筍が入っています。少し白濁したやさしい味のスープをガラス製の急須で足しながら戴きます。前菜三種盛(杏露酒トマトゼリー・クラゲの冷製・パクチーサラダ)は彩りも美しく中華らしい前菜です。又焼とブルーチーズは甘みと脂、パクチーとブルーチーズの香りが見事に調和していて本当に美味しいです。青菜のガーリック炒めはシャキシャキした歯応えがこれぞ中華という炒めものです。どのお料理も凝った器に盛り付けてられていて、それもとても愉しいです。お酒は雰囲気に合わせて杏露酒のソーダ割で2杯目。鴨肉のグラニュー糖和えは鴨肉をたっぷりのグラニュー糖でまぶしてあり、口に頬張ると、その柔らかな脂味と強烈な甘さに感動します。たくさんは食べられないですが、最高に幸福なひと口です。
いよいよメインの北京ダックです。セイロで蒸した包皮とアヒルの器に盛り付けられた鴨肉(皮・ムネ・モモ)、甘だれ・刻み干皮・ニンニク牛乳ペースト・白髪ネギ・胡瓜を配膳し、作り方を説明してくれます。お皿に包皮を拡げて、たっぷり甘だれを塗り、具材を載っけて包みます。カブリと齧り付くと本格的な北京ダックで、とても美味しいです。お酒が進み、スパークリング紹興酒「爽」で3杯目。これメチャクチャ旨い!お店の方に訊いてみると、一般流通していないようで都内ではここでしか呑めないらしい。お酒のペースが加速して、干し梅紹興酒で4杯目。コースの締めは絶品炒飯。一品の量は少しずつですが最後に炒飯が出てかなりお腹の満足感が高いコースです。気になったメニューがあったので酔っ払い海老とお酒は白酒フルーツサワー柘榴を注文しました。生のブラックタイガーを紹興酒漬けにしてあり、これも人気メニューのようです。この秘密の隠れ家は来年4月まで予約が埋まっているそうです。
