恵比寿にある笠原さんのお店にやってきました。今日は料理の細道「賛否両論」でランチです。前回夏の終わり9月頃から2回目の訪問です。だいぶ肌寒くなってきたので、どんなお料理か期待が膨らみます♪
賛否両論のサッポロ黒ラベル生ビールで乾杯。先付け3品(鯛の煮浸し・鴨ロースト・アオサと山エノキの出汁巻卵)は期待を裏切らず旬の美味しさで高揚させてくれます。おすすめの日本酒1杯目は亀泉 純米大吟醸(高知)。揚げ物のゴボウ竜田揚げは根菜の秋の恵みをホクホクに戴けます。お椀には蓮根のしんじょうと松茸・九条葱に柚子を添える上品な逸品です。おすすめ日本酒2杯目は群馬和泉松風 山廃酛純米。料理も旨いけどお酒も最高!
お造りはカマス・鰆苺・本鮪。本日の醤油は松茸醤油ですって(°▽°) これはやっていいこととやってはいけないことの境目で、まさに賛否両論。ただ…ヤバいくらい美味しかった笑。焼物は紅鮭におろしイクラとシャインマスカット白和えが添えてあります。美味しくてお洒落。おすすめ日本酒3杯目は神泉 手造り純米酒(埼玉)。旬の牡蠣の甘露煮がさりげないアテで登場。茶碗蒸しは牡蠣と白菜の擦り流し。今しか味わえない優しい味わいに感動です。土鍋釜で炊く新米は佐賀のゆめしずく。漬物・鯛山椒・梅昆布などごはんのお供が勢ぞろいです。最後はデザートを全種類もらって大満足の昼ごはんでした。
