この時は2人体制でカウンターを回しており、水鳥川さんが握ってくださいました。

貝特有の甘さが堪らない!
•ヒラメと鮑
塩と醤油どちらでも美味しいです。
鮑は肉厚なのに柔らかい!

柔らかく出汁の風味が非常に感じられました。
•トキシラズ
鮭本来の味がダイレクトに感じられ、淡白だけど物足りなさはありませんでした。

皮目がしっかりと焼かれた満足感のある焼き魚です。

皮目に旨みがしっかり感じられ、香りも⚪︎
•甘エビ
非常に肉厚で旨みと甘味が爆発!
•ホタテ
炙ることでまた違った味わいで中々味わえないようなホタテでした。
•小肌
しっかり香りのある〆られた小肌で、好みの小肌でした!
•鯵
浅葱が良い香りで、何より新鮮でした。
•赤貝
山口県産の赤貝とのことで、磯の香りが抜群でした。
•メヌケ
初めていただいた魚でしたが、噛めば噛むほど感じられる旨みで美味しい!
食感もしっかりありました。

サクサクとした新鮮な赤身です。
•中トロ
しっかり脂が乗っているものの、くどくない美味しい中トロです。
•紫雲丹
塩水処理してあり、濃厚で臭みは勿論ゼロ!
•穴子
対馬産
これからシーズンとのことで、ふわふわで詰めもちょうど良い濃さです。
•手巻き
海苔の風味やネギ、たくあんなど色々な味が楽しめます。
•卵
芝海老と大和芋を使った甘さのある卵で、〆にはもってこいです!
計22000円+3410円(日本酒×2)
シャリは赤酢と塩のパンチの効いた味で、好みは分かれるかもしれません。特に、赤酢が苦手な方は少しきついかもしれませんが、どれもシャリとネタが三位一体した素晴らしい逸品ばかりでした!
鮨さかいだと40000円を超えるため、中々払える金額ではないので、その半分でここまでの寿司がいただけるのはありがたい限りです!
サービスも含めて全てにおいて大満足となりました。
