北新地の『ゆうじろう』の名匠が銀座の一等地で鮨を握ると聞きつけ、満を持して足を運びました。

のれそれは優しい出汁の味と柔らかくとても喉越しの良いもの。
マスカルポーネと蟹味噌の濃厚な洋風ソースには淡白な縞鯵がよく合う。
ボタン海老の卵入りの出汁と一緒にいただく至高の一品。頭は焼いたものをいただきました。
毛ガニは柔らかく握っているのでそのまま手でいただきます。
桜餅のような香りのアオリイカ。
やま幸の赤身と大トロはやはり最高としか言いようがない美味しさ。
カワハギは広島県の牡蠣養殖場の下を泳ぐ700g以上のもの。
ニシンとキンキは備長炭で炙っているので脂身がのってトロトロ。香りも良き。
河豚の白子のドリアは濃厚でクリーミー。
弾むような食感と噛みごたえある車海老。
抹茶・大和芋・クリームチーズを混ぜ合わせた玉。
昼と夜、同様のコースで同じ値段設定となっております。銀座でこの値段は破格ではないでしょうか。
北新地から更なる進化を遂げた大将の鮨を心ゆくまで堪能いたしました。
