~ memories ~
▶︎家亀シェフは21歳で独立。蒲田の人気イタリアンオーナーを経て2024年にnacolオープン。わずか1年で予約困難店へと成長。家亀シェフのお人柄も人気の1つ。
▶︎店内は真っ直ぐ大きなウッドテーブルとグレーの壁で照明も柔らかくとても落ち着く雰囲気。
▶︎スタートは7種の生ハムにポルチーニ茸・モリーユ茸の出汁を取った温かいスープから。深い深い味わいで思わず笑みが溢れる美味しさ。
▶︎魚料理は青森の鮃。熟成させることで食感と旨味がギュッと凝縮されて素材そのものをダイレクトに楽しめる。
▶︎身の大きい伝助穴子には熟成背脂の生ハムを乗せて。菊芋のソースが柔らかく口で溶け込み絶妙なバランス!
▶︎追加もしちゃった夢にまで出てきたブリオッシュ!一般的には1年前後の熟成で販売されることが多いと思うジャンボンオーベルニュが2年半熟成!貴重な生ハムが惜しげも無く巻かれバターの風味も相まって幸せの絶頂!
▶︎更に続く生ハムラッシュ!生ハムとサラミの厳選盛り合わせには出来たての揚げパンやチーズ・苺が別皿で用意され一緒に食べても美味しいし、そのままでも素晴らしい味わい!
▶︎熟成ぐんま麦豚の生ハムはミシュラン店でもよく使われる高級米の雪椿に乗せて。美味しいお米の甘みとハムの塩気、蕩けるとはまさにこのこと!美味すぎる!
▶︎この日のお肉は黒毛和牛のヒレ。薪の香ばしさと絶妙な火入れに「生ハムだけが名物じゃない」と言わせんばかりの美味しいメイン!
▶︎お腹の具合で選択できるパスタ。せっかくなのでこの日の3種全てオーダー。おそらくパスタ40gで1つ1,000円程度。特に大好きな唐墨はパスタの茹で加減も含め絶品でした!
▶︎最後に飲める方はペアリング11,000円がめちゃくちゃお得なのでオススメ。途中日本酒おかわりしちゃいましたが、9種類も楽しめてこの値段設定は有難い。料理に合わせて美味しいお酒もぜひ楽しんで!
