予約の取りづらい桜田さん
店内は綺麗で高級感が漂う
最初は焼いた海苔とシャリのみ
パリッとした海苔と大粒のお米を使ったシャリ
赤酢加減もお米の炊き具合がちょうど良い
歯応えのある真蛸とじゅんさいにジュレとカリカリの吸盤
お造りは新鮮な目一鯛と甘みの強いとろける紫雲丹
香ばしく焼かれたのどぐろとシャリ
脂が乗ってほろっと崩れてめちゃくちゃ美味しかった
お口直しのスイカのシャーベット
お寿司の1品目は過去一柔らかい新烏賊
縞鯵も脂が乗っていて絶品
はじめて食べる白甘鯛のお寿司
燻製の香りが付いていて特にお気に入りのネタだった
ばふん雲丹は細巻き
甘みが強くシャリとの相性抜群
お待ちかねの本鮪の中とろ
美味しすぎて最後に追加で注文
大とろも大ぶりで口の中で一瞬でとろけた
車海老は驚くほどの甘さとぷりぷり食感
ミルガイも大きく臭みが全くなくとっても甘い
赤身漬けは出汁が効いて赤身の旨味が引き立っている
穴子はあたたかくふわっふわで最高
味噌汁は濃厚な鰹出汁が効いていて引き締まる
とろたくも玉子ももちろん美味しい
デザートはプリン、ほうじ茶アイス、ブランマンジェから選ぶ
八丁味噌のプリンが濃厚でこれまで食べたプリンの中でもトップレベルに美味しかった
最後は珍しいういろう玉子
コースの最初から丁寧でスピーディな大将の無駄のない手捌きが美しかった
どのお寿司もネタに合わせた温度管理が徹底されていてボリュームもネタのラインナップも申し分なし
名古屋でこのレベルのお寿司が食べれるなんて感動
