この日はコース仕立てで料理が決まっており、その流れで提供されました。まず前菜の盛り合わせは、ローストビーフや生ハムが美しく並び、きのこのマリネやナッツが添えられた彩り豊かな一皿。しっとりとしたローストビーフは噛むたびに上質な旨みが広がり、生ハムは塩味の角がなく非常にまろやか。ナッツの香ばしさときのこの風味がアクセントになり、構成として非常に完成度が高い。最初の一皿から丁寧さが伝わってきます。
メインのお肉は、分厚いカットにもかかわらず驚くほどやわらかい。ナイフを入れた瞬間に繊維がほどけ、口に含むと肉汁と旨みが一気に広がる。表面は香ばしく焼き上げられ、中はしっとりとジューシー。その火入れの精度が素晴らしく、まさに“口の中でとろける”感覚。ソースも濃すぎず、あくまで主役は肉という設計が明確で、上質な赤ワインと合わせると互いを引き立て合う完成度。付け合わせのポテトも外はカリッと、中はほくほくで抜かりがない。

I was honestly surprised to find such high-quality meat dishes and wine available in Yanai City, Yamaguchi Prefecture. Casual Dining & Wine Bar Kirak is a place where the food, atmosphere, and overall satisfaction all exceed expectations.
On this day, the dishes were set as a course and served in sequence. First came the appetizer platter: beautifully arranged roast beef and prosciutto, accompanied by marinated mushrooms and nuts, creating a vibrant, colorful plate. The tender roast beef released rich, premium umami with every bite, while the prosciutto was exceptionally mellow, free of harsh saltiness. The nutty aroma and mushroom flavor provided perfect accents, making the composition exceptionally well-balanced. The meticulous care was evident right from the first course.
The main meat course featured a thick cut that was surprisingly tender. The moment the knife sliced through, the fibers yielded, and upon tasting, the juices and umami exploded in the mouth. The surface is beautifully seared, while the interior remains moist and juicy. The precision of the cooking is outstanding, creating a truly "melt-in-your-mouth" sensation. The sauce is perfectly balanced, never overpowering, clearly designed to let the meat take center stage. Paired with a fine red wine, they complement each other beautifully. The accompanying potatoes are crispy on the outside and fluffy on the inside, leaving nothing to be desired.
