日帰り京都遠征にやってきました。
夜は会食のため、昼にすき焼き2軒はしごです。
一軒目は三嶋亭本店さん。明治6年創業の歴史あるお店で、関西風すき焼きの代表格。
すき焼き極上月コース21,780円を頂きました。
コース構成は、季節の小鉢、牛肉、玉子、ザク、しぐれ煮、ご飯、香の物、果物。
・小鉢:蕪蒸し、海老芋の唐揚げ、和牛のたたき、数の子、ふろふき大根、蟹とほうれん草の和え物
・肉:佐賀県産黒毛和牛サーロイン(1ヶ月熟成)3枚
・ザク:海老芋、金時人参、堀川牛蒡、九条ネギ、豆腐(京仁助豆腐)、白滝、もち麩(半兵衛麸)、三つ葉、淡路島産玉葱※野菜は季節で種類が変わる
・卵:京都府城陽市産の卵2つ
割下は醤油(秘伝)と昆布出汁のみ。
砂糖は一般的のものを使用してるが、割下にこだわりがあるとのこと。
熟成肉を提供している店が大きなポイント。
本日頂いた佐賀県産サーロインは1ヶ月熟成のもの。
これがめちゃめちゃ美味しい。砂糖を惜しみなくかけていたので味付けは甘いのだが、肉を食べた瞬間から口当たり良く、肉の旨みをバシバシ感じられる。
ザクは基本的に京野菜で、季節によって半分くらいは旬の野菜に入れ替えるとのこと。季節毎に伺いたいです。
なにより仲居さんの所作、接客が素晴らしく、素敵なひと時を過ごさせて頂きました。
今度は家族にも食べさせてあげたい。
